Recipes from the Garden – #1 Homemade Pico De Gallo
If you have a garden, you are probably overloaded with tomatoes and zucchini like I am. When I am not sharing with family and friends, I am finding ways to put my homegrown produce to good use. In this recipe series, I will be sharing some of my favorite recipes that incorporate my garden tomatoes an zucchini.
Here are some pictures of my wild garden…we weren’t so good about staking our tomatoes this year but they are still producing tons! Roma, Beefsteak and 2 varieties of Cherry tomatoes.
Today I will be featuring my homemade Pico De Gallo – super easy to make, and a fresh and healthy snack. Please note that the amounts of each ingredient are based on how we enjoy it most…but you can easily edit this recipe to add more or less of each ingredient to alter the flavor or spice from different ingredients. It is one of those recipes you CAN’T mess up! Enjoy!
Pico De Gallo
Approx 2 lbs of Diced Tomatoes – Roma seems to work best since they are firmer and hold up better in this recipe
1 Jalapeno Pepper – minced
1/3 White Onion – chopped
3 Tablespoons of Cilantro – chopped
1 Clove of Garlic, minced
Salt & Pepper to Taste
Although we haven’t done it, it would be really tasty if you added some lime, garlic powder and or cumin to the recipe. Enjoy!
